Chapati
Chapatis are a delicious, round, un-leavened bread that come from the Arab and Indian influence in the coastal region of Kenya. They are made of mostly flour, water, and oil, but some people add sugar, eggs, and even vegetables like carrots or pumpkins to make them sweeter. Chapatis are eaten with anything from savory stews to a sweet cup of hot tea.
Ingredients:
- 2 cups of flour
- 1 teaspoon of salt
- 1 tablespoon of sugar
- 1/2 cup of warm water
- 1 tablespoon of vegetable oil
Instructions:
- Place the warm water, salt, sugar, and oil in a large bowl.
- Stir slightly until salt and sugar are dissolved.
- Add flour and knead until all the water is absorbed.
- Spread extra flour on a flat surface, use rolling pin to spread dough flat on table.
- Place a tablespoon of oil on the dough and spread evenly.
Fried Rice
Fried rice is a popular component of Chinese food and other forms of Asian cuisine. It is made from rice fried in a wok, typically with additional ingredients left over from other dishes. It is sometimes served as the penultimate dish in Chinese banquets (just before dessert).
Ingredients:
- 2 cups of pishori rice
- 1 teaspoon of salt
- 4 large eggs
- 1 onion
- 1 chili pepper
- 2 cloves of garlic
- 3 tablespoons of soy sauce
- 1 tablespoon of vegetable oil
- 1 teaspoon of ground black pepper
- 1 handful of chopped corriander
- 1 teaspoon of salt
Instructions:
- Rinse and cook the rice separately.
- In a large, wide pan, fry the onions, chili pepper, and garlic in oil.
- Scramble the eggs separately.
- Add the scrambled eggs to the pan.
- Add the cooked rice.
- Add the soy sauce, salt, and black pepper.
- Stir the rice and let it fry evenly for several minutes.
- Add the chopped corriander as a garnish.
